  • 4 pieces boneless, skinless chicken breasts
  • 4 cups fresh spinach
  • 4 ounces goat cheese
  • 2 ounces cream cheese
  • 2 pieces garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • 0.5 teaspoons black pepper
  • 12 pieces toothpicks

Directions

Step 1

Preheat your oven to 375°F (190°C).

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant. Add the spinach and cook until wilted, about 2-3 minutes. Remove from heat and allow to cool slightly.
