Ingredients

  • 4 cups All-purpose flour
  • 2.25 teaspoons Active dry yeast
  • 1 teaspoon Sugar
  • 1.75 cups Warm water
  • 2 teaspoons Salt
  • 0.25 cups Olive oil
  • 6 cups Fresh spinach
  • 1.5 cups Feta cheese
  • 2 cloves Garlic cloves
  • 0.5 teaspoons Crushed red pepper flakes
  • 1 teaspoon Dried oregano
  • 1 large Egg
  • 2 tablespoons Sesame seeds (optional)

Directions

Step 1

In a large mixing bowl, combine the warm water, sugar, and active dry yeast. Let it sit for 5–10 minutes until the mixture becomes frothy.

Step 2

Add 3 1/2 cups of all-purpose flour, salt, and olive oil to the yeast mixture. Mix until a shaggy dough forms.

Step 3

Turn the dough onto a lightly floured surface and knead for 8–10 minutes, adding the remaining flour as needed, until the dough becomes smooth and elastic.

Step 4

Transfer the dough to an oiled bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.

Step 5

While the dough rises, prepare the filling. Heat a large skillet over medium heat and add 1 tablespoon of olive oil.

Step 6

Sauté minced garlic until fragrant, about 1 minute. Then add the fresh spinach and cook until wilted, about 2–3 minutes. Remove from heat and let cool slightly.

Step 7

In a mixing bowl, combine the cooked spinach, crumbled feta cheese, crushed red pepper flakes, and dried oregano. Mix well and set aside.

Step 8

After the dough has risen, punch it down and divide it into two equal portions.

Step 9

Roll out one portion of the dough into a large rectangle (roughly 9x13 inches) and place it on a parchment-lined baking sheet.

Step 10

Spread the spinach and feta filling evenly over the dough, leaving a 1-inch border around the edges.

Step 11

Roll out the second portion of dough to the same size and place it on top of the filling. Pinch the edges to seal the focaccia.

Step 12

Whisk the egg and brush it generously over the top of the dough. If desired, sprinkle with sesame seeds.

Step 13

Using your fingers, gently create dimples across the surface of the focaccia for that classic look.

Step 14

Preheat your oven to 400°F (200°C) and allow the assembled focaccia to rest for 15 minutes while the oven heats up.

Step 15

Bake in the preheated oven for 20–25 minutes, or until the focaccia is golden brown and cooked through.

Step 16

Let it cool slightly before slicing and serving. Enjoy the warm, cheesy goodness!
