Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 2 cups Fresh spinach
  • 3 ounces Feta cheese, crumbled
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper, freshly ground
  • 0.5 teaspoons Paprika
  • 0.5 teaspoons Dried oregano
  • 8 pieces Toothpicks

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it with olive oil.

Step 2

Place the chicken breasts on a cutting board. With a sharp knife, create a pocket in each breast by slicing horizontally without cutting all the way through.

Step 3

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Add the fresh spinach to the skillet and cook for 2-3 minutes, stirring, until wilted. Remove the skillet from heat and let the mixture cool slightly.
