Ingredients

  • 150 grams Feta cheese, crumbled

  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 120 milliliters Pasta cooking water
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 120 milliliters of the pasta cooking water before draining.

Step 2

While the pasta is cooking, heat the olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to let it burn.

Add the spinach to the skillet, stirring frequently, and cook until wilted, about 3-4 minutes.

Season the spinach with salt, black pepper, and red pepper flakes (if using).

Add the drained pasta to the skillet with the spinach and toss to combine.

Pour in about 60 milliliters of the reserved pasta water and mix well to create a light sauce. Add more pasta water if needed.

Stir in the crumbled feta cheese, allowing it to melt slightly and coat the pasta.
