In a large mixing bowl, combine the all-purpose flour, instant yeast, granulated sugar, and salt.
Add the olive oil and warm water to the dry ingredients. Mix until the dough begins to form.
Transfer the dough to a floured surface and knead for about 8 minutes, or until the dough is smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm spot for about 1 hour, or until it doubles in size.
While the dough is rising, prepare the filling. In a nonstick pan, heat a tablespoon of olive oil over medium heat.
Add the spinach to the pan and cook until it wilts, about 2-3 minutes. Remove from heat and let it cool slightly.
In a mixing bowl, combine the cooked spinach, crumbled feta cheese, ricotta cheese, minced garlic, salt, and black pepper. Mix well.
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Once the dough has risen, punch it down and divide it into four equal pieces.
Roll each piece of dough into a circle about 8 inches in diameter on a floured surface.
Place about 1/4 of the spinach and cheese filling onto one half of each dough circle, leaving a 1-inch border around the edge.
Fold the empty half of the dough over the filling to create a half-moon shape. Press the edges together firmly, then crimp them with a fork to seal.
Transfer the prepared calzones to the lined baking sheet.
Brush the top of each calzone with the beaten egg for a golden brown finish.
Optionally, sprinkle grated Parmesan cheese on top of the calzones for added flavor.
Bake in the preheated oven for 20-25 minutes, or until the calzones are golden and puffed.
Allow the calzones to cool for about 5 minutes before serving. Enjoy!
