Ingredients

  • 1 cup Corn kernels (fresh, canned, or frozen)
  • 1 tablespoon Diced jalapeño (optional)
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 12 pieces Egg roll wrappers
  • 4 cups Vegetable oil (for frying)
  • 1 large Avocado
  • 0.5 cup Ranch dressing
  • 1 tablespoon Fresh lime juice
  • 1 tablespoon Fresh cilantro (optional, chopped)

Directions

Step 1

In a large bowl, combine cooked chicken, spinach, black beans, cheddar cheese, mozzarella cheese, corn, and diced jalapeño, if using. Mix well.

Step 2

Add chili powder, cumin, garlic powder, salt, and black pepper to the mixture. Stir until evenly seasoned.

Step 3

Lay one egg roll wrapper on a clean surface with a corner facing you (diamond orientation). Spoon 2-3 tablespoons of the filling onto the center of the wrapper.
