Ingredients

  • 500 grams Fresh spinach, chopped
  • 125 grams All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper
  • 1 medium Onion, finely chopped
  • 2 large Garlic cloves, minced
  • 3 Eggs, beaten
  • 120 milliliters Milk
  • 200 grams Shredded cheddar cheese
  • 50 grams Grated Parmesan cheese
  • 60 grams Butter, melted
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat the oven to 180°C (350°F). Grease a 9x13-inch (23x33 cm) baking dish with butter or non-stick spray.

Step 2

Heat a large skillet over medium heat and add the olive oil. Sauté the chopped onion and minced garlic until soft and fragrant, about 3-4 minutes.

Step 3

Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

Step 4

In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper.

Step 5

In a separate bowl, mix the beaten eggs, milk, and melted butter until combined.

Step 6

Gradually add the wet ingredients to the dry ingredients and mix until just incorporated. Do not overmix.

Step 7

Fold in the cooked spinach mixture, shredded cheddar cheese, and grated Parmesan cheese until evenly distributed.

Step 8

Pour the batter into the prepared baking dish, spreading it out evenly with a spatula.

Step 9

Bake in the preheated oven for 30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Step 10

Allow the squares to cool in the pan for 5-10 minutes before slicing into squares.

Step 11

Serve warm or at room temperature. Enjoy!
