Ingredients

  • 500 grams Ground beef (or a mix of beef and pork)
  • 100 grams Fresh spinach
  • 50 grams Parmesan cheese, grated
  • 100 grams Mozzarella cheese, cubed
  • 60 grams Breadcrumbs
  • 1 large Egg
  • 2 cloves Garlic, minced
  • 2 tablespoons Parsley, finely chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

Wash the spinach thoroughly and blanch it by placing it in a pot of boiling water for 1-2 minutes. Drain and squeeze out excess water, then chop finely.

Step 3

In a large mixing bowl, combine the ground beef, chopped spinach, grated Parmesan, breadcrumbs, egg, minced garlic, parsley, salt, and black pepper. Mix until everything is well incorporated.

Step 4

Take a small portion of the mixture (about the size of a golf ball) and flatten it slightly in your hand. Place a cube of mozzarella cheese in the center and wrap the meat mixture around it to form a meatball. Repeat with the remaining mixture.

Step 5

Heat the olive oil in a large skillet over medium heat. Sear the meatballs for 2-3 minutes on each side until browned. This step helps lock in the juices and adds flavor.

Step 6

Arrange the seared meatballs on the prepared baking sheet and bake in the oven for 15-18 minutes, or until fully cooked through.

Step 7

Remove the meatballs from the oven and let them rest for 5 minutes before serving.

Step 8

Serve the spinach and cheese meatballs with marinara sauce, over pasta, or as a standalone appetizer. Enjoy!
