Ingredients

  • 4 cups Fresh spinach
  • 1 tablespoon Olive oil
  • 2 cloves Garlic, minced
  • 1 cup Ricotta cheese
  • 2 cups Shredded Monterey Jack cheese
  • 1 cup Shredded cheddar cheese
  • 2 cups Enchilada sauce
  • 8 Small flour or corn tortillas
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 Green onions, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat the olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic and sauté for 1 minute until fragrant.

Step 4

Add the spinach to the skillet and cook for 2-3 minutes until wilted. Remove from heat and let it cool slightly.

Step 5

In a mixing bowl, combine the ricotta cheese, 1 cup of shredded Monterey Jack cheese, and the cooked spinach. Stir well and season with salt and black pepper.

Pour 1/2 cup of enchilada sauce into the bottom of a 9x13-inch baking dish and spread evenly.

Take one tortilla at a time. Spoon about 1/4 cup of the spinach and cheese mixture onto the center of the tortilla and roll it up tightly.

Place the rolled tortilla seam-side down into the prepared baking dish. Repeat with the remaining tortillas and filling.

Pour the remaining enchilada sauce evenly over the rolled tortillas in the dish.

Sprinkle the remaining 1 cup of Monterey Jack cheese and 1 cup of shredded cheddar cheese over the top.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Remove from the oven and sprinkle the enchiladas with chopped green onions for garnish.
