Ingredients

  • 4 pieces chicken breasts
  • 5 ounces Boursin cheese (garlic & herb flavor)
  • 2 cups fresh spinach
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 8 pieces toothpicks
  • 2 tablespoons butter
  • 1.5 cups heavy cream
  • 0.75 cups Parmesan cheese, grated
  • 0.25 teaspoons nutmeg
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Use a sharp knife to carefully create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.

Step 3

In a skillet over medium heat, add 1 tablespoon of olive oil. Sauté the garlic for about 30 seconds until fragrant, then add the spinach. Cook until wilted, about 2 minutes. Remove from heat and let cool.

Step 4

In a mixing bowl, combine the sautéed spinach with the Boursin cheese. Mix until well incorporated.

Step 5

Stuff each chicken breast pocket with the spinach and Boursin mixture. Secure the openings with 1-2 toothpicks per breast to prevent the filling from spilling out.

Step 6

Season both sides of the chicken breasts with salt and black pepper.

Step 7

Heat the remaining 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes on each side, until golden brown.

Step 8

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Step 9

While the chicken bakes, prepare the Alfredo sauce. In a saucepan over medium heat, melt the butter. Add the heavy cream and stir constantly until it begins to simmer.

Step 10

Lower the heat and stir in the Parmesan cheese. Add the nutmeg and season with salt and pepper to taste. Continue stirring until the sauce thickens, about 3-4 minutes.

Step 11

Remove the chicken from the oven once fully cooked. Carefully remove the toothpicks.

Step 12

Plate the chicken and drizzle with the warm Alfredo sauce. Garnish with fresh parsley if desired.

Step 13

Serve immediately and enjoy!
