Ingredients

  • 12 oz Spaghetti or fettuccine noodles
  • 6 Bacon strips
  • 3 large Garlic cloves
  • 2 tbsp Olive oil
  • 5 cups Fresh baby spinach
  • 0.5 tsp Red pepper flakes
  • 0.5 cup Parmesan cheese
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Cook the noodles according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

Step 2

In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon and transfer it to a paper towel-lined plate to drain. Crumble the bacon into small pieces once cooled.

Step 3

Using the same skillet, discard all but 2 tablespoons of the bacon grease. Add the olive oil to the skillet and heat over medium heat.

Step 4

Mince the garlic and add it to the skillet. Sauté for 1-2 minutes until fragrant, being careful not to burn it.

Add the fresh baby spinach to the skillet and cook for 2-3 minutes, tossing occasionally, until wilted.

Stir in the cooked noodles, red pepper flakes, salt, black pepper, and reserved pasta water. Toss everything together until evenly combined and heated through.

Remove the skillet from heat and stir in the crumbled bacon and Parmesan cheese.
