Ingredients

  • 1 pound Baby clams (canned or fresh, rinsed and drained)
  • 4 cups Fresh spinach
  • 3 tablespoons Extra virgin olive oil
  • 4 Garlic cloves (minced)
  • 1 Shallot (minced)
  • 0.5 cup Dry white wine
  • 2 tablespoons Lemon juice
  • 0.5 teaspoon Crushed red pepper flakes
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper (freshly ground)
  • 0.5 cup Chicken or vegetable broth
  • 1 tablespoon Butter (optional)
  • 2 tablespoons Fresh parsley (chopped for garnish)

Directions

Step 1

Heat the olive oil in a large skillet or saucepan over medium heat.

Step 2

Add the minced garlic and shallot, and sauté for 2-3 minutes until fragrant and translucent, stirring to ensure they do not burn.

Step 3

Stir in the crushed red pepper flakes and cook for another 30 seconds.

Step 4

Pour in the white wine and bring it to a simmer. Cook for 2 minutes to let the alcohol evaporate and the flavors concentrate.

Step 5

Add the baby clams, chicken or vegetable broth, lemon juice, salt, and black pepper. Stir gently and let it simmer for 3-4 minutes.

Step 6

Gradually add the fresh spinach to the pan, stirring until it wilts and blends into the sauce, about 2-3 minutes.

Step 7

If desired, stir in the butter for a creamier texture.

Step 8

Taste and adjust seasoning with additional salt or black pepper, if needed.

Step 9

Serve warm over cooked pasta, rice, or with crusty bread, and garnish with fresh parsley.
