Ingredients

  • 4 cups fresh spinach
  • 2 whole ripe avocado
  • 3 cups vegetable broth
  • 1 medium onion
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 0.5 cup coconut milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)

Directions

Step 1

Wash the spinach thoroughly and set it aside to drain.

Step 2

Peel and finely chop the onion and garlic.

Step 3

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté for 3-4 minutes, or until they are soft and fragrant.

Add the spinach to the pot and cook for 2-3 minutes, stirring occasionally, until it wilts.

Step 5

Pour the vegetable broth into the pot and bring to a simmer. Cook for 5 minutes to allow the flavors to combine.

While the soup is simmering, halve the avocados, remove the pits, and scoop out the flesh into a blender.
