Ingredients

  • 6 cups Baby spinach
  • 2 medium Avocado
  • 1 cup Cherry tomatoes
  • 0.25 medium Red onion
  • 0.5 cup Feta cheese
  • 1 tablespoon Chia seeds (optional)
  • 3 tablespoons Lemon juice
  • 2 tablespoons Olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Rinse the baby spinach thoroughly under cold water and pat dry with a clean kitchen towel. Set aside in a large salad bowl.

Step 2

Cut the avocados in half, remove the pits, and peel off the skins. Slice the avocado flesh into thin strips and gently toss them with a little lemon juice to prevent browning.

Rinse the cherry tomatoes and cut them in half.
