Ingredients

  • 2 pounds Boneless chicken (or lamb, pork, or beef)
  • 0.5 cups Olive oil
  • 0.5 cups Red wine vinegar
  • 3 tablespoons Fresh lemon juice
  • 4 cloves Garlic, minced
  • 2 teaspoons Dried oregano
  • 2 teaspoons Dried basil
  • 2 teaspoons Dried parsley
  • 1 teaspoons Salt
  • 1 teaspoons Black pepper
  • 0.5 teaspoons Crushed red pepper flakes (optional)
  • 4 pieces Italian bread or rolls
  • 8 pieces Wooden skewers (soaked in water for 30 minutes)

Directions

Step 1

Cut the boneless chicken (or choice of meat) into 1-inch cubes and place them in a large bowl or resealable plastic bag.

Step 2

In a separate bowl, whisk together olive oil, red wine vinegar, fresh lemon juice, minced garlic, oregano, basil, parsley, salt, black pepper, and crushed red pepper flakes (if using) to create the marinade.

Step 3

Pour the marinade over the meat, ensuring all pieces are fully coated. Cover and refrigerate for at least 6 hours, or preferably overnight, to allow the flavors to develop.

Step 4

Preheat the grill to medium-high heat.

Step 5

Thread the marinated meat onto wooden skewers, leaving a small space between each piece for even cooking.

Step 6

Grill the skewers over direct heat for about 3-4 minutes per side, turning frequently, until the meat is cooked through and slightly charred. The interior should reach a safe temperature of 165°F for chicken, or as appropriate for the selected meat.

Step 7

Once cooked, remove the skewers from the grill and let them rest for 2-3 minutes.

Step 8

Serve the spiedies by sliding the grilled meat off the skewers and into Italian bread or rolls. Optionally, drizzle some leftover marinade (that was reserved before marinating the raw meat) or a fresh vinaigrette over the meat for extra flavor.

Step 9

Enjoy your homemade spiedies!
