Ingredients

  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil

  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon crushed red pepper flakes
  • 1 yellow onion, diced
  • 3 carrots, peeled and cut into chunks
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1 cup dry red wine
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf

Directions

Step 1

Season the beef chuck roast with salt, black pepper, paprika, garlic powder, and crushed red pepper flakes on all sides.

Heat olive oil in a large skillet over medium-high heat. Sear the beef roast for 3-4 minutes per side until browned. Remove from heat and set aside.
