Ingredients

  • 4 pieces whitefish fillets (such as cod, haddock, or tilapia)
  • 3 tablespoons olive oil
  • 3 cloves garlic cloves, minced
  • 0.5 teaspoons red pepper flakes
  • 2 cups cherry tomatoes, halved
  • 0.75 cups kalamata olives, pitted and halved
  • 2 tablespoons capers, rinsed and drained
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Pat the whitefish fillets dry with paper towels and season both sides with salt and black pepper. Set aside.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add the whitefish fillets in a single layer. Cook for 3-4 minutes on each side until golden brown and just cooked through. Remove the fish from the skillet and set aside on a plate.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and red pepper flakes, sautéing for 30 seconds until fragrant.

Step 4

Add the cherry tomatoes to the skillet and cook for 5 minutes, stirring occasionally, until they begin to soften and release their juices.

Step 5

Stir in the kalamata olives and capers and cook for another 2 minutes to combine the flavors.

Step 6

Deglaze the skillet by adding the lemon juice, scraping up any browned bits from the bottom of the pan.

Step 7

Return the cooked whitefish fillets to the skillet, nestling them into the tomato and olive mixture. Spoon some of the sauce over the fish and let it warm for 2-3 minutes.

Step 8

Sprinkle the chopped fresh parsley over the dish before serving. Serve immediately alongside rice, couscous, or crusty bread to soak up the delicious sauce.
