Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely diced
  • 4 cloves garlic cloves, minced
  • 1 teaspoon red pepper flakes
  • 6 ounces tomato paste
  • 1/3 cup vodka
  • 1/2 cup heavy cream
  • 1/4 cup chicken or vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/4 cup fresh basil leaves, chopped
  • 1/3 cup parmesan cheese, grated
  • 15 ounces crushed tomatoes (canned)

Directions

Step 1

Heat the olive oil and butter in a large skillet or saucepan over medium heat until the butter is melted.

Step 2

Add the diced onion and sauté for 5-7 minutes until softened and translucent.

Step 3

Stir in the minced garlic and red pepper flakes, cooking for 1 minute until fragrant.

Step 4

Add the tomato paste and cook, stirring frequently, for 2-3 minutes to caramelize it slightly.

Step 5

Deglaze the pan by pouring in the vodka. Stir and let it simmer for 2-3 minutes to allow the alcohol to cook off.

Step 6

Pour in the crushed tomatoes and chicken (or vegetable) broth. Stir to combine and bring the mixture to a low simmer.

Step 7

Reduce the heat to low. Stir in the heavy cream and season with salt and black pepper. Let the sauce simmer gently for 10-15 minutes until thickened, stirring occasionally.

Step 8

Taste the sauce and adjust the seasoning as needed. Stir in the chopped basil and grated parmesan cheese.

Step 9

Serve the spicy vodka tomatoes as a sauce over cooked pasta or with crusty bread for dipping. Garnish with additional basil or cheese, if desired.
