  • 2 large cucumbers
  • 1 teaspoon salt
  • 4 tablespoons rice vinegar

  • 1 teaspoon sesame oil
  • 2 teaspoons honey
  • 1 teaspoon red pepper flakes
  • 1 clove garlic
  • 1 teaspoon sesame seeds
  • 2 stems scallions

Directions

Step 1

Wash and dry the cucumbers. Using a mandoline or sharp knife, thinly slice the cucumbers into rounds, approximately 1/8 inch thick.

Place the cucumber slices in a large bowl. Sprinkle them with 1 teaspoon of salt and toss to coat evenly. Let sit for 10 minutes to draw out excess water.

While the cucumbers rest, prepare the dressing. In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, and red pepper flakes.
