Ingredients

  • 6 pieces Chicken thighs (bone-in, skin-on)
  • 0.5 cup White vinegar
  • 0.25 cup Soy sauce
  • 0.5 cup Water
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, finely chopped
  • 4 cloves Garlic cloves, minced
  • 2 pieces Fresh red chilies, sliced
  • 1 teaspoon Crushed red pepper flakes
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Salt
  • 1 tablespoon Brown sugar
  • 2 tablespoons Fresh parsley, chopped (optional garnish)
  • 4 cups Cooked rice

Directions

Step 1

Pat the chicken thighs dry with paper towels and season them with salt and ground black pepper on both sides.

Step 2

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Once hot, sear the chicken thighs, skin-side down, until golden brown and crispy, about 5-6 minutes. Flip and sear the other side for 3-4 minutes. Remove the chicken and set aside.

Step 3

In the same skillet, reduce the heat to medium and add the chopped onion. Sauté until softened, about 3-4 minutes.

Add the minced garlic and sliced red chilies to the skillet. Cook for 1-2 minutes until fragrant.
