Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 3 tbsp soy sauce
  • 2 tbsp fish sauce
  • 2 tbsp honey
  • 1 tbsp Sriracha
  • 2 cloves garlic, minced
  • 1 lemongrass stalk, minced (white part only)
  • 1 carrot, julienned
  • 1 cup daikon radish, julienned
  • 1 cup white vinegar
  • 2 tbsp granulated sugar
  • 1 cup warm water
  • 1 tsp salt
  • 1 baguette (split lengthwise into 4 portions)
  • 4 tbsp mayonnaise
  • 0.5 cup cilantro leaves
  • 2 jalapeño peppers, thinly sliced

Directions

Step 1

In a medium mixing bowl, prepare the chicken marinade by whisking together the soy sauce, fish sauce, honey, Sriracha, minced garlic, and minced lemongrass.

Step 2

Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes (up to 2 hours for deeper flavor).

Step 3

While the chicken marinates, prepare the pickled vegetables. In a medium bowl, whisk together the white vinegar, sugar, warm water, and salt until the sugar dissolves.

Step 4

Add the julienned carrot and daikon radish to the pickling liquid. Let sit for at least 20 minutes, stirring occasionally.

Step 5

Preheat a large skillet or grill pan over medium-high heat. Remove the chicken from the marinade and cook for 4-5 minutes per side, or until fully cooked and nicely caramelized. Set aside to rest for 5 minutes before slicing thinly.

Step 6

Meanwhile, toast the baguette portions lightly in the oven or on a stovetop grill pan.

Step 7

Spread 1 tablespoon of mayonnaise on each baguette portion. Layer with sliced chicken, pickled vegetables, cilantro leaves, and jalapeño slices.

Step 8

Serve immediately and enjoy your Spicy Vietnamese Chicken Sandwiches!
