Ingredients

  • 1 lb Ground turkey
  • 2 tbsp Olive oil
  • 1 medium Yellow onion, finely diced
  • 3 cloves Garlic cloves, minced
  • 1 medium Jalapeño, finely diced
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 1 tsp Chili powder
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Tomato paste
  • 0.25 cup Chicken broth
  • 2 tbsp Fresh cilantro, chopped

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the diced onion to the skillet and sauté for 3-4 minutes, or until softened and translucent.

Step 3

Stir in the minced garlic and diced jalapeño, cooking for another 1-2 minutes until fragrant.

Step 4

Add the ground turkey to the skillet, breaking it up with a wooden spoon. Cook until browned and fully cooked through, about 7-8 minutes.

Step 5

Sprinkle in the cumin, smoked paprika, chili powder, oregano, salt, and black pepper. Stir well to coat the meat in the spices.

Step 6

Stir in the tomato paste and cook for 1-2 minutes, allowing it to caramelize slightly.

Step 7

Pour in the chicken broth and bring the mixture to a simmer. Cook for 3-5 minutes, stirring occasionally, until the liquid has reduced and the filling is thickened.

Step 8

Remove the skillet from the heat and stir in the chopped cilantro for freshness.

Step 9

Let the filling cool slightly before using to fill empanada dough. The mixture can also be refrigerated for up to 3 days or frozen for later use.
