Rinse the sushi rice under cold water until it runs clear. Combine rinsed rice and 2 cups of water in a rice cooker. Cook the rice according to the rice cooker instructions.
In a small saucepan, heat rice vinegar, sugar, and salt over low heat until sugar dissolves. Let it cool.
Cut the sashimi-grade tuna into small cubes and set aside.
In a mixing bowl, combine Sriracha, mayonnaise, soy sauce, and sesame oil. Mix well to form the spicy tuna sauce.
Add the cubed tuna to the spicy sauce and mix until all the tuna pieces are evenly coated.
Finely chop the green onions and set aside. They will be used for garnish and extra flavor.
Once the rice is cooked, transfer it to a large wooden or glass bowl. Gradually fold in the seasoned vinegar with a spatula, fanning the rice as you go to cool it and give it a glossy appearance.
Lay a bamboo sushi mat on a work surface and place a sheet of plastic wrap on top (to prevent sticking). Place a nori sheet shiny side down on the mat.
Wet your hands with water and take about 1/2 cup of rice, spreading it evenly over the nori sheet, leaving a 1-inch border at the top for sealing.
Sprinkle sesame seeds over the rice to your preference.
Place a quarter of the spicy tuna mixture in a line along the center of the rice.
Roll the sushi tightly using the bamboo mat, applying gentle pressure to shape and seal the roll. Brush some water on the nori border to help it stick and close the roll.
Repeat the steps with the remaining nori sheets and filling.
Once all rolls are done, use a sharp knife to cut each roll into 6-8 pieces. Wipe the knife clean with a damp towel between cuts to ensure clean slices.
Serve the spicy tuna sushi garnished with chopped green onions if desired.
