Rinse jasmine rice under cold water until the water runs clear to remove excess starch.
In a medium-sized pot, combine the rice and 360 ml of water. Bring to a boil over medium-high heat.
Once boiling, reduce the heat to low, cover the pot, and let it simmer for 10 minutes or until the rice is fully cooked and water is absorbed.
Remove from heat and let the rice sit, covered, for an additional 10 minutes. Fluff with a fork and set aside.
While the rice is cooking, dice the sushi-grade tuna into 1 cm cubes. Place the diced tuna in a mixing bowl.
Chop the green onions finely and add them to the mixing bowl with the tuna.
In another small bowl, whisk together soy sauce, sesame oil, sriracha, rice vinegar, and honey until well combined.
Pour the sauce over the tuna and green onions, gently mixing until the tuna is well coated. Let it marinate in the refrigerator for at least 10 minutes.
