Begin by preparing the sushi rice. Rinse 2 cups of sushi rice under cold water until the water runs clear. Cook according to package instructions. Once cooked, transfer to a large bowl.
In a small bowl, mix 1 tablespoon of rice vinegar, 0.5 teaspoon of salt, and 1 teaspoon of sugar until dissolved. Pour this mixture over the warm cooked rice and gently fold it in. Let the rice cool to room temperature.
While the rice cools, prepare the tuna filling. Dice 200 grams of sushi-grade tuna into small cubes and place them in a bowl.
For the spicy sauce, mix 2 tablespoons of sriracha sauce, 3 tablespoons of mayonnaise, 1 teaspoon of soy sauce, and 1 teaspoon of toasted sesame oil in a small bowl. Adjust the sriracha based on your spiciness preference.
Fold the spicy sauce into the diced tuna until the tuna is evenly coated.
Slice half a cucumber into thin strips and thinly slice 2 scallions. Halve and pit 1 avocado, then slice it thinly.
To assemble the hand rolls, take one sheet of nori and cut it in half horizontally. Place it shiny side down on the palm of your hand.
Place a small amount of sushi rice on the left side of the nori and spread it lightly with your fingers, leaving the right third of the nori uncovered.
Layer a few cucumber strips, a slice of avocado, and a sprinkle of scallions over the rice.
Top with a couple of spoonfuls of the spicy tuna mixture.
To wrap the hand roll, bring the bottom left corner of the nori up over the filling to form a cone, and continue rolling it into a cone shape. Use a grain of rice as glue to stick the edge of the nori and seal the hand roll.
