  • 4 cups beef broth
  • 2 medium potatoes (peeled and diced)
  • 2 medium carrots (peeled and sliced into rounds)
  • 1 leaf bay leaf
  • 2 tablespoons fresh parsley (chopped, for garnish)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Add the beef stew meat to the pot and sear until browned on all sides, about 5-7 minutes. Remove the beef with a slotted spoon and set it aside.
