  • 28 ounces Canned crushed tomatoes
  • 4 cups Vegetable broth
  • 15 ounces Canned black beans, rinsed and drained
  • 15 ounces Canned kidney beans, rinsed and drained
  • 15 ounces Canned chickpeas, rinsed and drained
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped (optional for garnish)
  • 4 Lime wedges (optional for serving)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for 5–7 minutes, or until softened and translucent.

Stir in the minced garlic and diced red bell pepper. Cook for another 2–3 minutes until fragrant.
