Ingredients

  • 400 g firm tofu
  • 3 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 3 pieces garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 1 medium red bell pepper, sliced
  • 1 large carrot, sliced
  • 1 medium zucchini, sliced
  • 2 tablespoons gochujang (Korean chili paste)
  • 3 tablespoons soy sauce
  • 4 cups vegetable broth
  • 1 cup water
  • 1 teaspoon sugar
  • 3 pieces green onions, sliced
  • 1 teaspoon toasted sesame oil
  • 1 to taste salt
  • 1 to taste ground black pepper

Directions

Step 1

1. Press the tofu for about 10-15 minutes to remove excess water, and then cut it into 1-inch cubes.
