Ingredients

  • 12 pieces Sea scallops (large)
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Vegetable oil
  • 2 cloves Garlic, minced
  • 2 pieces Red chilies, finely sliced
  • 1 teaspoon Fresh ginger, grated
  • 1.5 tablespoons Fish sauce
  • 1 tablespoon Soy sauce
  • 1 tablespoon Honey
  • 2 tablespoons Lime juice
  • 2 tablespoons Fresh cilantro, chopped
  • 2 tablespoons Fresh basil, chopped
  • 4 pieces Lime wedges (for garnish)

Directions

Step 1

Pat the scallops dry with a paper towel to remove excess moisture. Season both sides with salt and black pepper.

Step 2

Heat a large skillet or wok over medium-high heat. Add the vegetable oil and allow it to heat until shimmering.

Step 3

Place the scallops in the skillet in a single layer. Sear for 2-3 minutes on one side, without moving, until a golden crust forms. Flip the scallops and sear for another 1-2 minutes or until just cooked through. Remove the scallops from the skillet and set aside on a plate.

Step 4

In the same skillet, lower the heat to medium and add the minced garlic, sliced red chilies, and grated ginger. Sauté for 1 minute until aromatic.

Add the fish sauce, soy sauce, honey, and lime juice to the skillet. Stir until the ingredients are well combined and the sauce begins to simmer.
