  • 0.33 cup Creamy peanut butter
  • 3 tbsp Soy sauce
  • 2 tbsp Honey
  • 2 tbsp Lime juice
  • 0.5 cup Coconut milk
  • 1 tbsp Sriracha sauce
  • 2 tbsp Chopped peanuts (optional, for garnish)
  • 2 Green onions, sliced (for garnish)
  • 2 tbsp Cilantro leaves (for garnish)

Directions

Step 1

Cook the rice noodles according to the package instructions, drain, and set aside.

Season the chicken breast with salt and black pepper on both sides.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook for 4-5 minutes per side, or until fully cooked. Remove the chicken from the skillet, let it rest for a few minutes, then slice into thin strips.
