  • 8 oz rice noodles
  • 2 cups fresh spinach
  • 1 lime, juiced
  • 0.25 cup fresh cilantro, chopped
  • 2 green onions, sliced
  • 0.5 tsp optional crushed red pepper flakes

Directions

Step 1

Heat the vegetable oil in a large pot or Dutch oven over medium heat.

Add the minced garlic and ginger to the pot and sauté for 1-2 minutes until fragrant.
