Ingredients

  • 8 oz rice noodles
  • 1 tbsp sesame oil
  • 3 garlic cloves, minced
  • 1 red bell pepper, thinly sliced

  • 3 green onions, sliced

  • 0.25 cup crunchy peanut butter
  • 3 tbsp soy sauce
  • 2 tbsp lime juice
  • 2 tbsp honey
  • 1 tbsp Sriracha sauce
  • 2 tbsp water
  • 0.25 cup roasted peanuts, chopped
  • 4 lime wedges

Directions

Step 1

Bring a large pot of water to a boil. Add the rice noodles and cook according to the package instructions until tender. Drain and set aside.

Step 2

In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey, Sriracha sauce, and water until smooth. Adjust seasoning to taste.
