Ingredients

  • 1 cup Cilantro leaves, roughly chopped
  • 0.5 cup Mint leaves, roughly chopped
  • 2 pieces Shallots, thinly sliced
  • 1 medium Cucumber, thinly sliced
  • 1 large Carrot, julienned
  • 2 stalks Green onions, thinly sliced
  • 0.25 cup Peanuts, roasted and crushed
  • 4 cups Lettuce leaves
  • 4 cups Water
  • 1 teaspoon Salt

Directions

Step 1

Add 4 cups of water and 1 teaspoon of salt to a medium pot. Bring it to a boil over medium-high heat.

Step 2

Place the chicken breasts in the boiling water and poach them for 10-12 minutes, or until fully cooked and the internal temperature reaches 165°F (74°C).
