Ingredients

  • 8 ounces Rice noodles
  • 1 pound Beef sirloin, thinly sliced
  • 6 cups Beef broth
  • 1 cup Coconut milk
  • 2 tablespoons Fish sauce
  • 1 tablespoon Soy sauce
  • 1 tablespoon Brown sugar
  • 2 Lemongrass stalks, smashed and chopped
  • 4 Garlic cloves, minced
  • 1 tablespoon Fresh ginger, grated
  • 2 tablespoons Lime juice
  • 2 tablespoons Thai red curry paste
  • 2 Red chili peppers, thinly sliced
  • 1 cup Bean sprouts
  • 0.25 cup Fresh cilantro, roughly chopped
  • 2 Green onions, thinly sliced
  • 0.25 cup Fresh Thai basil leaves
  • 2 tablespoons Cooking oil
  • 2 cups Water

Directions

Step 1

Soak the rice noodles in a large bowl of warm water for about 20 minutes, or until softened. Drain and set aside.

Step 2

Heat the cooking oil in a large pot over medium heat. Add the garlic, ginger, and lemongrass, and sauté for 2 minutes until fragrant.

Step 3

Add the red curry paste and stir for another 1 minute to release its aroma.

Step 4

Pour in the beef broth, water, and coconut milk. Bring the mixture to a boil.

Step 5

Stir in the fish sauce, soy sauce, and brown sugar. Reduce the heat to low and let the broth simmer for 10 minutes to allow the flavors to meld.

Step 6

Add the thinly sliced beef to the pot and cook for 2-3 minutes, or until the beef is just cooked through.

Step 7

Stir in lime juice and adjust the seasoning with more fish sauce or soy sauce, if needed.

Step 8

Divide the soaked and softened rice noodles among four serving bowls.

Step 9

Ladle the hot soup over the noodles, ensuring each bowl gets a good portion of beef and broth.

Step 10

Top each bowl with bean sprouts, cilantro, green onions, Thai basil leaves, and sliced red chili peppers for garnish.

Step 11

Serve immediately with lime wedges on the side for an extra tangy kick.
