Ingredients

  • 2 pounds ground beef
  • 0.5 pounds ground pork
  • 1 large yellow onion, finely diced
  • 1 medium green bell pepper, finely diced
  • 3 cloves garlic cloves, minced
  • 1 cup crushed tortilla chips
  • 1 large egg
  • 0.25 cup whole milk
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper (optional, for extra heat)
  • 1 cup shredded cheddar cheese
  • 0.5 cup salsa (your favorite brand or homemade)
  • 0.25 cup ketchup
  • 2 tablespoons fresh cilantro, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a rimmed baking sheet with parchment paper or lightly grease a loaf pan.

Step 2

In a large mixing bowl, combine the ground beef and ground pork. Use your hands to gently mix them together without overworking the meat.

Step 3

Add the diced onion, green bell pepper, minced garlic, and crushed tortilla chips to the meat mixture.

Step 4

In a small bowl, whisk together the egg, milk, chili powder, ground cumin, smoked paprika, kosher salt, black pepper, and cayenne pepper (if using). Pour this mixture into the bowl with the meat.

Step 5

Add the shredded cheddar cheese to the bowl, then use your hands or a large spoon to gently mix all the ingredients until evenly combined.

Step 6

Shape the meat mixture into a loaf shape on the prepared baking sheet or press it into the loaf pan.

Step 7

In a small bowl, stir together the salsa and ketchup to make the glaze. Spread this evenly over the top of the meatloaf.

Step 8

Bake the meatloaf in the preheated oven for 50-55 minutes, or until the internal temperature reaches 160°F (71°C) when measured with a meat thermometer.

Step 9

Remove the meatloaf from the oven and let it rest for 10 minutes before slicing.

Step 10

If desired, garnish with fresh cilantro before serving. Enjoy your Spicy Tex Mex Meatloaf with your favorite sides!
