Ingredients

  • 1 lb Ground beef
  • 0.5 lb Ground pork
  • 0.5 cup Breadcrumbs
  • 1 Egg
  • 2 cloves Garlic, minced
  • 0.5 cup Onion, finely chopped
  • 1 Jalapeño, deseeded and finely chopped
  • 1 tbsp Chili powder
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh cilantro, chopped
  • 1 tbsp Olive oil
  • 1 can Canned diced tomatoes with green chilies (e.g., Rotel)
  • 1 tbsp Tomato paste
  • 0.5 cup Beef broth

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.

Step 2

In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, egg, garlic, onion, jalapeño, chili powder, cumin, smoked paprika, salt, black pepper, and cilantro. Mix until all ingredients are evenly incorporated, but do not overmix.

Step 3

Using your hands or a small scoop, form the mixture into 1-inch meatballs and place them on the prepared baking sheet, evenly spaced.

Step 4

Bake the meatballs in the preheated oven for 15 minutes, or until they are browned and cooked through.

Step 5

While the meatballs are baking, heat the olive oil in a large skillet over medium heat.

Step 6

Add the diced tomatoes with green chilies, tomato paste, and beef broth to the skillet. Stir to combine and bring the sauce to a simmer. Let it cook for about 8-10 minutes, stirring occasionally, until slightly thickened.

Step 7

Remove the meatballs from the oven and carefully transfer them to the skillet with the sauce. Gently coat the meatballs with the sauce and let them simmer together for an additional 5 minutes.

Step 8

Serve the meatballs hot, garnished with extra chopped cilantro if desired. They pair well with rice, tortillas, or a side of guacamole.
