  • 2 tablespoons chinkiang vinegar (Chinese black vinegar)
  • 3 tablespoons tahini or Chinese sesame paste
  • 3 tablespoons chili oil
  • 1 cup chicken stock
  • 3 stalks scallions, finely sliced
  • 3 tablespoons peanuts, roughly chopped
  • 1 teaspoon sugar
  • 2 cups bok choy or other leafy greens (optional)

Directions

Step 1

Bring a large pot of water to a boil. Cook the fresh wheat noodles according to package instructions (usually 4-6 minutes). Drain, rinse under cold water, and set aside.

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Add the ground pork and cook until browned, breaking it into small pieces with a wooden spoon, about 5-7 minutes. Remove the pork from the skillet and set aside.
