Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped

  • 1 medium red bell pepper, diced
  • 3 cups fresh or frozen sweetcorn kernels
  • 4 cups chicken or vegetable broth
  • 1 cup coconut milk
  • 1 pound shrimp, peeled and deveined
  • 1 teaspoon red chili flakes
  • 1 teaspoon paprika
  • 0.5 teaspoon ground cumin
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped
  • 2 stalks green onions, sliced

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and sauté for 3-4 minutes until translucent.

Stir in the minced garlic and red bell pepper. Cook for another 2-3 minutes.

Add the sweetcorn kernels, chicken or vegetable broth, coconut milk, red chili flakes, paprika, ground cumin, salt, and black pepper. Stir to combine.
