Ingredients

  • 2.5 cups All-purpose flour
  • 0.75 cups Unsalted butter (cold, cubed)
  • 0.5 teaspoons Salt
  • 6 tablespoons Cold water
  • 1 large Sweet potato (medium)
  • 1 large Yam (medium)
  • 0.5 cups Onion (finely diced)
  • 2 cloves Garlic (minced)
  • 1 teaspoons Cumin
  • 1 teaspoons Smoked paprika
  • 0.5 teaspoons Cayenne pepper
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 1 large Egg (beaten for egg wash)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Make the pastry dough: In a bowl, combine the all-purpose flour and 0.5 teaspoons of salt. Using a pastry cutter or your fingers, rub in the cold, cubed butter until the mixture resembles coarse crumbs.

Step 3

Gradually add the cold water, one tablespoon at a time, mixing gently with a fork until a dough forms. Do not overmix. Wrap in plastic wrap and refrigerate for at least 20 minutes.

Prepare the filling: Peel and dice the sweet potato and yam into small cubes about 1/2 inch in size.

Heat the olive oil in a skillet over medium heat. Add the onion and garlic and sauté until translucent and fragrant, about 2-3 minutes.

Roll out the chilled dough on a floured surface to about 1/8-inch thickness. Cut into 6 equal circles, approximately 6 inches in diameter.

Spoon about 2-3 tablespoons of the filling onto one half of each circle, leaving a small border around the edges. Fold the other half of the dough over the filling to create a half-moon shape.

Seal the edges by pressing them together with a fork. Make 2 small slits on top of each pasty to allow steam to escape.

Brush the tops of the pasties with the beaten egg for a golden, glossy finish.

Step 11

Place the pasties on a baking sheet lined with parchment paper and bake for 25-30 minutes, or until the pastry is golden brown and flaky.

Let the pasties cool for 5 minutes before serving. Enjoy warm or at room temperature.
