Ingredients

  • 4 medium-sized sweet potatoes

  • 4 cups vegetable broth

  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro

Directions

Step 1

Peel and dice the sweet potatoes into 1-inch cubes. Set aside.

Heat olive oil in a large pot over medium heat.

Chop the onion and add it to the pot. Sauté for 3-4 minutes until softened.
