Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons butter
  • 2 tablespoons cream cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 sheets frozen puff pastry sheets
  • 1 large egg
  • 1 tablespoon water
  • 1 tablespoon sesame seeds

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Peel the sweet potatoes and dice them into small cubes. Boil in a pot of salted water for 10-12 minutes, or until tender. Drain and set aside.

Step 3

In a mixing bowl, mash the cooked sweet potatoes with butter and cream cheese until smooth.

Step 4

Add garlic powder, smoked paprika, cayenne pepper, salt, and black pepper to the sweet potato mixture. Mix well and adjust seasoning to taste. Let the mixture cool completely.

Step 5

Thaw the puff pastry sheets according to package instructions. Once thawed, lightly flour a clean surface and roll out the sheets to smooth any creases.

Step 6

Cut each pastry sheet into 6 equal squares, yielding a total of 12 squares.

Step 7

Place a spoonful of the sweet potato mixture in the center of each square. Fold the square diagonally to form a triangle, and press the edges with a fork to seal.

Step 8

In a small bowl, whisk together the egg and water to create an egg wash. Brush the top of each puff with the egg wash and sprinkle sesame seeds on top.

Step 9

Line a baking sheet with parchment paper and arrange the puffs on it, leaving enough space between them to puff and expand as they bake.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crispy.

Step 11

Remove from the oven and let cool slightly before serving. Enjoy warm or at room temperature!
