Ingredients

  • 3 large sweet potatoes
  • 3 tablespoons olive oil
  • 1 tablespoon cornstarch
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup mayonnaise
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon lime juice

Directions

Step 1

Preheat your oven to 425°F (220°C) and line two large baking sheets with parchment paper.

Step 2

Peel the sweet potatoes and cut them into thin fry-shaped sticks, about 1/4 inch wide.

Step 3

Place the cut sweet potatoes in a large mixing bowl. Sprinkle the cornstarch over them and toss until evenly coated.

Step 4

Drizzle olive oil over the sweet potatoes and toss again. Ensure each piece is lightly coated with oil.

Step 5

In a small bowl, combine paprika, garlic powder, cayenne pepper, salt, and black pepper. Sprinkle the seasoning mixture over the sweet potatoes and toss to coat evenly.

Step 6

Spread the seasoned sweet potatoes onto the prepared baking sheets in a single layer, making sure they don't overlap.

Step 7

Bake in the preheated oven for 15 minutes. Remove the trays, flip the fries, and bake for an additional 15 minutes, or until the fries are crispy and golden brown.

Step 8

While the fries are baking, prepare the Sriracha dipping sauce. In a small bowl, mix mayonnaise, Sriracha sauce, and lime juice until smooth and well combined.

Step 9

Remove the fries from the oven, let them cool for 3-5 minutes, and serve immediately with the Sriracha dipping sauce on the side.
