Ingredients

  • 2 pieces large sweet onions
  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 2 teaspoons granulated sugar
  • 1 cup buttermilk
  • 1 large egg
  • 2 cups panko breadcrumbs
  • 4 cups vegetable oil

Directions

Step 1

Peel the sweet onions and slice them into approximately 1/2-inch thick rings. Separate the layers and set aside.

Step 2

In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, garlic powder, cayenne pepper, paprika, and granulated sugar. Whisk to combine.

Step 3

In a separate bowl, whisk together the buttermilk and egg until well blended.

Step 4

Pour the wet mixture into the dry ingredients and stir to create a smooth batter. The consistency should be similar to pancake batter—add a bit more buttermilk if needed.

Step 5

Place the panko breadcrumbs in a shallow dish.

Step 6

Dip each onion ring into the batter, allowing any excess to drip off, then coat it thoroughly in the breadcrumbs. Lay the coated rings on a plate or baking sheet.

Step 7

Heat the vegetable oil in a deep skillet or pot to 350°F (175°C). Use a thermometer for accurate temperature control.

Step 8

Carefully lower a few onion rings into the hot oil, being careful not to overcrowd the pan. Fry for 2-3 minutes, or until golden brown and crisp, turning them halfway through cooking if necessary.

Step 9

Transfer the fried rings to a wire rack or a paper towel-lined plate to drain excess oil. Repeat with the remaining onion rings.

Step 10

Serve immediately with your favorite dipping sauces, such as spicy mayo, ranch, or ketchup.
