  • 2 tablespoons tomato paste
  • 50 grams raisins
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 12 pieces store-bought or homemade empanada dough discs
  • 1 large egg, beaten
  • 2 tablespoons olive oil

Directions

Step 1

Heat olive oil in a large skillet over medium heat.

Step 2

Add the chopped onion and garlic, and sauté for 3-4 minutes until soft and fragrant.

Add ground beef to the skillet and cook for 6-8 minutes, breaking it up with a spoon, until fully browned.

Stir in chipotle chili powder, ground cumin, ground cinnamon, and paprika. Cook for 1-2 minutes to toast the spices.

Add tomato paste, raisins, brown sugar, salt, and black pepper. Stir well and cook for another 3-4 minutes until the flavors meld together and the mixture is slightly thickened. Remove from heat and let it cool to room temperature.
