Ingredients

  • 1 head Green cabbage
  • 500 grams Ground beef
  • 1 cup Cooked white rice
  • 1 medium, finely chopped Onion
  • 3 cloves, minced Garlic
  • 0.5 teaspoons Cayenne pepper
  • 1 teaspoons Paprika
  • 1 teaspoons Dried oregano
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 1 tablespoon Olive oil
  • 250 grams, finely chopped Mushrooms
  • 3 tablespoons Unsalted butter
  • 2 tablespoons All-purpose flour
  • 3 cups Beef broth
  • 0.5 cups Heavy cream
  • 2 tablespoons, chopped (for garnish) Fresh parsley

Directions

Step 1

Bring a large pot of water to boil. Carefully remove the outer leaves of the cabbage (about 12 leaves) and blanch them in the boiling water for 2-3 minutes until pliable. Remove and set aside to cool.

Step 2

In a large mixing bowl, combine the ground beef, cooked rice, chopped onion, minced garlic, cayenne pepper, paprika, oregano, salt, and black pepper. Mix well until evenly combined.

Step 3

Lay a cabbage leaf flat on a clean surface. Place about 2-3 tablespoons of the filling mixture at the base of the leaf. Fold the sides over the filling and roll up tightly, starting from the base. Repeat with the remaining leaves and filling.

Heat olive oil in a large skillet over medium heat. Place the stuffed cabbage rolls seam-side down in the skillet and sear for 2-3 minutes on each side until lightly browned. Remove and set aside.

Cover the dish tightly with aluminum foil and bake for 40-45 minutes, until the rolls are tender and fully cooked.
