Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, finely grated
  • 3 tablespoons soy sauce
  • 2 tablespoons sriracha sauce (or preferred hot sauce)
  • 1 tablespoon honey
  • 2 tablespoons sesame oil
  • 2 tablespoons vegetable oil
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • 2 green onions, sliced (optional, for garnish)
  • 1 teaspoon toasted sesame seeds (optional, for garnish)

Directions

Step 1

In a small bowl, whisk together soy sauce, sriracha, honey, and cornstarch. Add water and mix until the cornstarch is dissolved. Set the sauce aside.

Step 2

Heat the vegetable oil in a large non-stick skillet or wok over medium-high heat.

Step 3

Once the oil is hot, add the shrimp in a single layer. Cook for 2-3 minutes on each side or until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.

Step 4

In the same skillet, add the sesame oil, garlic, and ginger. Stir-fry for 30 seconds until fragrant.

Step 5

Add the red, yellow, and green bell peppers to the skillet. Stir-fry for 3-4 minutes, or until they are slightly softened but still crisp.

Step 6

Return the cooked shrimp to the skillet along with the prepared sauce. Stir everything together and cook for an additional 2-3 minutes, or until the sauce thickens and evenly coats the shrimp and peppers.

Step 7

Remove from heat and garnish with green onions and toasted sesame seeds, if desired. Serve immediately with steamed rice or noodles.
