Ingredients

  • 500 g boneless chicken thighs
  • 3 tbsp soy sauce
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 4 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 1 tsp red chili flakes
  • 1 tbsp dark soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp honey
  • 2 tbsp water
  • 200 g baby bok choy, chopped
  • 100 g kale, stems removed and chopped
  • 50 g roasted peanuts
  • 3 green onions, sliced
  • 1 tsp sesame oil

Directions

Step 1

Slice the chicken thighs into bite-sized pieces and place them in a bowl.

Step 2

Add 2 tablespoons of soy sauce and the cornstarch to the chicken, mixing well to coat. Let it marinate while preparing other ingredients.

Step 3

In a small bowl, combine the dark soy sauce, oyster sauce, honey, water, and the remaining 1 tablespoon of soy sauce. Set aside.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the chicken to the hot skillet and stir-fry for 4-5 minutes until browned and fully cooked. Remove the chicken from the skillet and set aside.

Add the remaining 1 tablespoon of vegetable oil to the skillet, followed by the minced garlic, ginger, and red chili flakes. Stir-fry for 30 seconds until fragrant.

Add the chopped bok choy and kale to the skillet. Stir-fry for 3-4 minutes, until the greens are wilted but still vibrant.

Return the chicken to the skillet and pour in the sauce mixture. Stir well to coat everything evenly in the sauce. Cook for another 2-3 minutes to allow the flavors to meld together.

Turn off the heat and stir in the sesame oil for added aroma.

Transfer the stir-fry to a serving dish and top with roasted peanuts and sliced green onions.
