Ingredients

  • 1 pound Flank steak
  • 2 tablespoons Olive oil
  • 2 teaspoons Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 large Flour tortillas
  • 2 cups Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 0.25 cup Jalapeños, sliced
  • 2 tablespoons Butter
  • 0.5 cup Sour cream
  • 2 tablespoons Fresh cilantro, chopped

Directions

Step 1

Place the flank steak on a cutting board and pat dry. In a small bowl, mix the chili powder, cumin, garlic powder, smoked paprika, salt, and black pepper.

Step 2

Rub the spice mixture evenly over both sides of the steak. Let it marinate for 10 minutes while you prepare other ingredients.

Step 3

Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil, then cook the steak for 3-4 minutes on each side or until it reaches your desired doneness.

Remove the steak from the skillet and let it rest for 5 minutes. Thinly slice the steak against the grain.
