Ingredients

  • 400 g spaghetti
  • 2 tbsp olive oil
  • 4 large garlic cloves
  • 1.5 tsp crushed red pepper flakes
  • 400 g canned diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp sugar
  • 10 fresh basil leaves
  • 50 g Parmesan cheese, grated
  • 0.5 tsp chili powder (optional)
  • 1 cup water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Drain, reserving 1 cup of pasta water, and set aside.

Step 2

While the spaghetti cooks, heat olive oil in a large skillet or saucepan over medium heat.

Step 3

Thinly slice the garlic cloves and add them to the hot oil. Sauté for 2-3 minutes until fragrant and golden, being careful not to burn them.

Stir in the crushed red pepper flakes and chili powder (if using). Cook for another 30 seconds to release their flavors.

Add the canned diced tomatoes, tomato paste, 1 cup of water, salt, black pepper, and sugar to the skillet. Stir well to combine.
