Ingredients

  • 1 cup dried soybeans
  • 1 medium onion
  • 3 garlic cloves
  • 1 tablespoon fresh ginger
  • 1 teaspoon red chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • 1 teaspoon salt
  • 0.5 cup fresh mint leaves
  • 0.5 cup breadcrumbs
  • 2 tablespoons cornstarch
  • 2 tablespoons oil
  • 0.25 cup water

Directions

Step 1

Rinse the dried soybeans thoroughly and soak them in water overnight or for at least 8 hours.

Step 2

After soaking, drain the soybeans and boil them in fresh water until tender, about 20-30 minutes. Drain and let them cool slightly.

Step 3

In a food processor, add the cooked soybeans, onion (roughly chopped), garlic cloves, and fresh ginger. Pulse until the mixture resembles a coarse paste.

Step 4

Transfer the mixture to a large mixing bowl. Add the red chili powder, ground cumin, garam masala, and salt. Mix well.

Step 5

Finely chop the fresh mint leaves and stir them into the mixture along with the breadcrumbs. Mix until combined.

Step 6

In a small bowl, dissolve the cornstarch in 1/4 cup of water to make a slurry. Gradually add the slurry to the soybean mixture, mixing until the texture is firm but malleable for shaping patties. You may not need all of the slurry.

Step 7

Divide the mixture into 8 equal portions and shape each into a round patty.

Step 8

Heat a non-stick skillet over medium heat and add the oil. Once hot, cook the patties for 3-4 minutes per side, or until golden brown and slightly crispy.

Step 9

Serve the spicy soybean patties warm with a side of mint chutney, yogurt, or a fresh salad.
